I’m heading to Seattle on Friday until Tuesday. Any must-hit dining suggestions? We are staying in Belltown area and will be in the UofW area on Sunday. Many of the restaurants that I’m finding that are highly rated don’t seem to be open Sundays or Mondays. Any suggestions?

Did you check the restaurant in the top of the Space Needle? It's really cool, it spins and by the time you finish your meal you'll have made about two rotations, so you get amazing views. It also gets you a ticket the observation deck.
The troll bridge is cool, Pikes Place Market is a must hit too. The OG Starbucks is there.
If you want to hike there is tons of hiking. Mt. Rainier is worth the drive too. It's stunning.
You can take a ferry out in the Puget Sound. Or head down to a beach and beach comb for sand dollars, which is a delightful and low key activity.
The Music museum is super cool too.
That's more than restaurants, lol. Let me ponder, I'll be back. I love Seattle. I know there's other eateries we enjoy.

Tutta Bella. It's Neapolitan style pizza and I believe there's a certificate there from the city of Naples about the authenticity of their pizza. It's 14 years later and my H & I still talk about them.

I’m a Seattle native, infrequent poster here. Welcome to the PNW!
In Belltown, Lola (Greek), Barolo (Italian), Matt’s in the Market (seafood).
UW area, Din Tai Fung at University Village is worth a trip if you’ve never had it, Molly Moons ice cream at UVillage for dessert is great, and Agua Verde (Mexican and on the water), very near UW campus.
If willing to go outside of those areas but not by far, Spinasse (Italian) is so good, in Capitol Hill neighborhood, east of Belltown. Rock Creek Seafood in Fremont is very good. Fremont is not too far from U District, quick Uber.
The Cherry Blossoms at UW… it will be very crowded but beautiful.

I second Din Tai Fung. I moved and no longer live close to one, and it makes me very, very sad.
