I seriously need help here as well. I will have 3 kids, plus DH to feed, and I just need to make sure I have some freezer meals set up.
I have never done this before - EVER. And I think I need to finally talk DH into getting a deep freezer.

I usually need to plan about four meals to cook and with leftovers and other plans that usually lasts almost a week. For us I can't plan more than that or groceries go bad.
For this week I have so far: Leftover Chicken Orzo soup Leftover curry beef over rice Making lasagne for an event tomorrow so hoping for leftovers for supper. I've been hungry for Upside Down Pizza so I want to make that(not in the healthy category lol Then I'll pry do a chicken crockpot meal out of my freezer if I need another meal before we leave for California on Friday.

My meal plan for the week:
Monday: Smothered crockpot pork chops Tuesday: Chicken Fiesta in the dutch oven Wednesday: Goulash with garlic toast and side salad Thursday: White chicken chilli Friday: Creamy ranch and bacon chicken (in the crockpot) on a toasted bun Saturday: Leftovers Sunday: Roasted whole chicken with stuffing and green beans on the side.
ETA: Clearly I prefer chicken at the moment. I didn't even realize how many of my meals this week contain chicken until just now.

we make a version of this too! I put it over spaghetti squash to make it a bit healthier/go a little farther.

So I've always been a meal planner--I spend too much if I'm doing meals night-by-night and making midweek stops at the store. We have a meat CSA, so once a month our meat for the month get delivered frozen and we keep it in the deep freezer. Once a week I take a look at the inventory and use that as a starting point. Like, OK, this week I want to use up the ground beef, chorizo, a package of meatballs, and a bavette steak. That drives the menu, along with whats on sale at the store. I make my grocery list and menu on the same page. This week's menu: Saturday - brown rice jambalaya with shrimp and chorizo (split package) Sunday - balsamic marinated grilled bavette over caesar salad monday - italian wedding soup (leftovers for lunches throughout the week) tuesday - WW bucatini with baked tomato sauce and italian veggies, meatballs and ricotta wednesday - sweet potato lentil hash with leftover chorizo and kale thursday - crustless quiche with whatever cheese and veggies are kicking around in my fridge by thursday, prob a side salad friday - pizza takeout (always) Lunches for H will be leftovers or cold cut sandwiches. I try to do a healthy soup on Mondays for me to eat for lunches. Blessedly, DS eats the same thing for lunch every day (sunbutter and jelly on wheat with a side of yogurt, a fruit, a veggie and a crunchy snack like Cheezits). I also make an InstantPot of yogurt for everyone to have for the week. So in some ways the grocery list writes itself because its the same shit every week. yianna, the deep freezer is an amazing investment, definitely get one. It can save you a lot of money by allowing you to stock up on sales. Mine always has a ton of meat, seafood and veggies. And leftovers. So even when my meal plan falls through, I usually have something I can pull out in a pinch.

I usually cook so much better, but I've been feeling under the weather so easy wins right now. I bought the chicken from the deli counter at the grocery store and just need to reheat tonight & boil redskins for tonight.
Sunday: chili dogs, french fries Monday: fried chicken, mashed potatoes & gravy, corn. Tuesday: breakfast: eggs, sausage, toast Wednesday: turkey noodle soup Thursday: baked penne, garlic bread Friday: grilled cheese & tomato soup Saturday: oven baked chicken nachos

My meal planning is boring due to GD: I am going to make a crustless pizza some night. I found a recipe that uses cream cheese as the crust and one that uses chicken as the base. I also am going to make a cheeseburger casserole thing (it doesn't have noodles in it) Also, we will probably have chicken stir fry one night. The rest of the week probably will be leftovers.

Ive pretty much just seen it replace pasta in any dish (pesto with shrimp, a white wine sauce) or rice (under chili, stir fries). I want to use it like hash browns and make something cheesy.

Monday - buffalo chicken salads Tuesday - leftover buffalo chicken of some sort. Wednesday- we are hoping to get dinner after out AS. Thursday- Tacos or Nachos Friday - Breakfast for dinner Weekend - I have not a clue.

yianna my stand up deep freezer is my favorite appliance! I have a shelf dedicated to freezer meals, a shelf and a half for bagged produce, a shelf for meat and a shelf for other stuff. The door holds extra soups, fruits and odd items. I shop my freezer all the time. I will get a freezer meal plan together after the holidays and definitely share here. My favs include crockpot lasagna, tomato bisque, chili, enchiladas, peppered beef, and rosemary turkey. I also stash muffins, breads and granola in the freezer for quick fixes.

Also I don't have a lot to contribute to this thread... our schedule is hectic and my appetite is still all over the place, so it's a lot of fend-for-yourselves or eating out. Or easy Trader Joe's meals. On the docket this week: TJ's orange chicken, with fried rice; chicken pot pie; tortellini and a side salad. I've got to get my brain back to the good pre-pregnancy habits I had with doing WW.

If we are talking meals plans for this week mine looks like this... Monday- hot dogs in the gym lobby, veggies and fruit Tuesday- leftover beef roast, biscuits and salad Wednesday- pot stickers and stir fry with rice Thursday- fancy girls night with my bff and kids- mussels, pear and goat cheese tart, coconut shrimp, stuffing and sausage meatballs, cranberry sauce Friday- pizza and salad

That sounds right up my alley. 2 tbsp. olive oil 1 acorn squash, sliced in 1/2-inch thick rounds and seeds removed ¼ tsp. salt ¼ tsp. pepper 2 tsp. brown sugar ½ c. whole pecans, chopped ¼ tsp. pumpkin pie spice 6 c. baby arugula 1 avocado, sliced 1 pomegranate, arils removed 2 oz. feta Pomegranate ginger vinaigrette ⅓ c. pomegranate juice ¼ c. apple cider vinegar ½ tsp. freshly grated ginger 1 garlic clove, freshly grated ¼ tsp. salt ¼ tsp. pepper ⅓ c. olive oil Heat a large skillet over medium heat and add olive oil. Cover the squash slices with salt and pepper, then add them to the skillet and cook until golden, about 5 minutes per side. If desired, you can add the brown sugar to help the squash caramelize. Heat a small saucepan over low heat and add the pecans. Toast until they are slightly golden and fragrant, stirring and shaking the pan as they toast, for about 5 minutes. Toss them with the pumpkin pie spice. Add the arugula to a large bowl with a pinch of salt and pepper. For the dressing: combine pome juice, vinegar, ginger, garlic, salt and pepper in a large bowl and whisk together. Stream in the olive oil while constantly whisking until the dressing comes together. Store in the fridge for up to one week. Add in the avocado, pomegranate arils, cucumber, pecans, feta and squash pieces. Cover in the pomegranate dressing.

Tonight: chicken breasts with leek sauce, green beans, and couscous
Wednesday: maple Chipotle mushroom and avocado salad
Thursday: beef dip sandwiches with asparagus
Friday: chicken fried steak with biscuits and green beans again
Saturday: my mom is cooking my requested birthday dinner! General tso's chicken with broccoli, spam fried rice, chow mein with cabbage
Sunday: whatever leftovers I can scrounge up

Yesterday ended up being angel hair with sweet italian sausage and jar sauce - dh cooked though so no complaints here.
