We smoked a chicken on Sunday, so we're using those leftovers plus homemade mayo, hardboiled eggs and some sauteed veggies to make a chicken & egg salad that we will serve on toast and lettuce. Last night we had spaghetti and smoked meatballs and tomorrow we're having smoked meatloaf sandwiches on rye. Thursday we might be having pad thai or maybe risotto and then Friday we're having breakfast.

Salsa chicken in burritos Beef stew Ham and cheese crepes That's all I have planned so far. Tell me more about crepes. I want to make some. So easy! 1 3/4 cup flour 1/2 tsp salt 2 1/2 cups milk 4 eggs Mix everything together. Preheat frying pan and grease with butter. Pour a ladle full into the pan and spread by swirling by the handle (does that make sense?) to distribute the batter evenly. Leave to cook until the edges bubble then flip and cook the other side for a minute or two and that's it.

We grilled a lot of meat yesterday so we'll eat that at least tonight and maybe tomorrow too. Thursday is tacos, and Friday night we're going on a donut crawl at 5 so that will be dinner.

That would work! I usually make the entire batch of crepes first then put ham/cheese inside a couple at a time and heat on a cookie sheet in the oven or if I'm only making 1, I put it i in the microwave until the cheese melts.

Ummmm details. It's a local festival with donut vendors from all over the state, and there's a donut crawl to start it off. Then after the crawl you can go buy more Donuts at any of the places that you liked and I think there's other food there as well. There are 16 total donut vendors.... so we'll essentially have 32 Donuts between the 3 of us. I'm excited. My waistline is not. Haha.

Okay I decided.
San Francisco chicken (AKA ITK's chicken) with Jamie Oliver's eggplant parm (grilled instead of breaded and fried)
Fajitas with all the fixings
Keilbasa and cabbage au gratin, maybe pierogies, too
Pork tenderloin and squash cakes
I might pick up some ham for crepes, too

We went camping over the long weekend so I'm entirely unprepared for this weeks.
We had fajitas Sunday, and fajita quesadillas last night.
We have a ton of bacon we need to cook asap. So maybe bacon, eggs, and hash browns one night. Any other bacon ideas? BLTs?

I am a big fan of black bean soup with cubed avocado in it and crumbled bacon and tortilla chips on top.
