haha I just saw someone biking around outside at my office and I was like "If it was sunny here all the time I bet I'd be so jacked and bike around like a happy person all the time like in California." but no thanks to wearing ski goggles to bike lol.
And probably not but hey that's what I imagine California life to be like.

I put a whole chicken in my slow cooker this morning and just totally am crossing my fingers haha. I really stuffed that sucker in. I got the slow cooker as a high school graduation gift and I think I need to upgrade in size haha. The chicken filled the entire thing and the lid was hard to get on.. lol I hope that it's still ok.
What is everyone's nemesis food? Because roast chicken is mine. For some good forsaken reason I can cook ANYTHING but a damn chicken. I always end up having it raw inside and so I am trying the slow cooker to just make sure that it gets cooked through. It will be in there for 12 hours, god help it. It's to the point where I don’t actually cook a roast chicken to eat, I cook it and then use the meat in better recipes lol. I'm curious what everyone's achilles heel is. Haha i'm sure a roast chicken is so easy to someone in here!

Y'all! It started off as the best weekend and turned into a shit show. I forgot my charger and only got to charge in sporadic bursts over the weekend. Also I'm pretty sure we all have colds that makes my head want to explode and B is being a total turd over everything because I'm assuming he doesn't feel well. It was melt down city all yesterday and this morning. CestLaVie I can't cook chicken either. I hate chicken though so IDGAF really. To me it's always dry or undercooked and there is no in between. Unless it's fried but I'm almost 30 and can't eat fried food unless I want to be 300 lbs.

mamascarlett, I make a lot of good chicken recipes with pieces but for some reason using a whole chicken is just difficult. I could cut it up into pieces, but I don't want to thaw, cut, and refreeze. and my damn aunt keeps buying me chickens at her office fundraisers hahaha. So I have to use them!

I've been complaining my desk isn't big enough. It's like a small computer desk but when I work I like to spread out with my calendar, to do list, random papers, whatever.
I pulled a beer pong table out of our attic and set it up corner desk style. My office now looks like a frat party is going to start at any moment.

CestLaVie, I rarely cook a whole chicken, but when I do, I use my slow cooker. The trick that I found was to ball up tin foil in the bottom of the slow cooker first. Ends up moist and actually gives it crispy skin on the outside. Somehow magic! I suck at bbq'ing. Like pretty much anything. I've just grown to prefer my hot dogs and burgers a little crispy! lmao.

I'm on-call this week and ended up getting a couple of MOTN calls last night. Then M woke up at 4 am. Please pass the coffee. I have a late meeting this evening, so I am working from home this morning on my side college project. I cannot wait for this f'ing thing to be done. Like it's so much work!

CestLaVie, take that whole chicken and stick an open beer can (with the beer) up it's butt. Stand that chicken up on a grill and cook until the temp is at least 165° on a thermometer. Best damn chicken ever. And of course, season the outside of it. sarahack - i temp everything - so you can cook chicken, just make sure the temp is 165°. also shoving a lemon up the butt with garlic, salt and pepper, and rub the outside with butter or olive oil and season - pop in oven on 375 until correct temp. Volia - you can cooks some juicy as shit chicken.

I forgot to mention, but we had an appointment for DS1 with a adolescent psychiatrist a few weeks back. He has given him a dx of ADHD - inattentive type. We are trialing a medication to see if that will help him with school. I'm feeling conflicted about the whole thing.

We decided on medication (combined with OT) and we've seen huge strides. I never thought I'd medicate my 5 yr old but it's certainly helped

RunsforWineandCarbs, the last one i did was beer can and it tasted great but I ended up cutting off the outside pieces for supper and continued cooking the inside. I really need a damn thermometer, that would probabaly solve this haha.

CestLaVie- if it makes you feel better, it's rare that employed people are able to ride their bikes to work in So Cal. Most people have a pretty crappy commute and unless you live in Los Angeles, the public transportation is limited, so you have to drive and be stuck in traffic, everywhere. I suck at baking- I can make oatmeal chocolate chip cookies, sometimes I use cranberries instead. That's it... I have a hard time following recipes. I like to use recipes for inspiration, but that's it. My food nemesis is pizza dough... I keep trying with that one and it never comes out right. Sent from my iPhone using Tapatalk

I have a bad attention span lol so the best tip I ever got for this was to boil them in rolling boil for 1 minute, then put the lid off and remove from heat for 15 minutes. It works so well! and you only have to watch it for a minute haha.

I can't hard boil eggs. It's ridiculous. I'm actually a decent cook but no matter what method I use, the inside of the egg is always gooey. Have you tried the oven baking method?

I love cooking all the things in my oven though because I have a temperature probe that is built into my oven that syncs with it, so once the temp is reached the oven automatically shuts off. It's my favorite. I haven't messed anything up with that baby.. yet

The boiling eggs things tickles me every time. H for the life of him cannot do it. I do it (the same way) and they come out perfect. Always.
Fill a pot with eggs in single layer, fill with cold water until the eggs are JUST covered, pour in a splash of white vinegar (helps to peel easily), put on high right until it boils, turn down down to a low simmer and set a timer for 10 minutes.
Done. and always perfect.
