I roasted them yesterday, but first I mixed yellow and green squash with with garlic, spices, Olive oil, a squeeze of lemon, and dijon mustard.

I actually made a plan this week!
S: seasoned pork loin, chopped salad and lemon garlic asparagus M: chili and cinnamon rolls T: tacos W: skillet chicken cordon Bleu, asparagus, roasted potatoes T: Pork chops with Dijon herb sauce, roasted veggies F: roasted lemon garlic shrimp on pasta
Apparently I’m in to roasting this week.

I will second it. It was delicious. A really different flavor combination. Next time I would make my chili spicier to contrast the sweet. It's heartier than cornbread if you dip.

I do believe roasted purple onion is the best thing ever. Followed closely by roasted brussel sprouts.

MH talks about some kind of onion on the grill that he had when he was little. Covered in butter and wrapped in foil. Always sounded odd to me ETA: i'm guessing your purple onion is my red onion?

Yeah, I call them purple, but the store probably calls them red.
I cut it in pieces and separate the layers. I usually roast them with other vegetables. Tonight it was zucchini and yellow squash. A little olive oil, salt and pepper. It gets a really yummy sweetness to it. Soooo good.

Monday - Cincinnati chili Tuesday - Ham steaks for the guys, faux chicken for mom and I, asparagus, creamed corn. Wednesday - Fried rice Thrusday - Zucchini noodles in a pesto cream sauce with spinach and carrots Friday - Stir fry Saturday - out, A and I are going to see John Caparalo, my parents will have the boys Sunday - sandwiches and quick sides. We have a party until 6 so this will be quick and the boys love sandwiches all of a sudden.
