It’s sunny today!! We went for a long walk and it felt so good. I fear we will need to turn the heat on soon though bc mornings are pretty cool. I am all set for our garage sale -yay! Need fall inspiration for my meal plan. Anyone have anything amazing? tinydancer I am so happy for you!! Fingers crossed

Dd1 is on a roll with awesome kid quotes today. First she told me she didn’t want me to cut her bangs because she just wants “to stay bang crazy.” Then later she told me to come into dd1’s room to see the big mess they made. She said, “It took a lot of hard work to do all this.” Ha.

dizzycooks, 2 of my favorite fall recipes are 1) pumpkin soup - I actually use Hokkaido squash (the ones that look like mini pumpkins). Chop, get seeds and stringy stuff out, saute with onion and a bit of butter until onion is transparent and pumpkin starts to get a bit soft. Add broth. Simmer until pumpkin is mushy. Puree. Done. 2) pumpkin pasta - Also with Hokkaido. Chop, get seeds and stringy stuff out, cut into 1/2-1 inch cubes. Saute with butter and onion until onion is transparent and pumpkin starts to get soft. Add a bit of chicken broth and something dairy - I use milk and cream cheese, but pretty much anything will do it, I think. Simmer until pumpkin is soft (but not mushy like the soup ) and sauce is reduced. Add thyme, salt, and pepper. Serve over pasta. It's really easy and really yummy. I bet it would also be great over zucchini pasta.

I do something very similar to crimsonandclover's pumpkin soup except with butternut squash. Sometimes I roast it in the oven then put it in a pot with broth and puree. So good and so easy. Another favorite is Chicken and Wild Rice soup from Skinnytaste. I'm making it this week!

My H is a Minnesota boy and they are big on wild rice soup there. I haven’t found a recipe I am that crazy about yet, but I’ve had good luck with other skinny taste recipes.

I would love to contribute to the recipe talk but I'm limited to warming up frozen stuff, tacos and spaghetti. I want to be better! I never do anything else though. We usually just make something mentioned above or chicken with veggie sides.
I'd really like to have a few go-to recipes where I am confident with them and know what ingredients to buy and how to prepare. One day.

I made a beef pot pie. I can't remember if someone here suggested or not but It was essentially beef bourginon in a crusty pie. It was awesome. Also beef stew with all the root veggies. Wine tomato paste beef broth tons of garlic bay leaf salt pepper done. Also pasties they are a root vegetable based hand pie. Very dry. Big time comfort food. But you can go way heavy on the veg parts and make it a little less brutal. When i am really feeling the cold set in mac and cheese. My friend gave me a whole book of m&c recipes I plan to explore this winter.

This morning I threw a pork loin roast in the crockpot with some jarred green chili salsa. Cook all day on low, shred pork, add a bit more of the salsa & we had a super easy pork taco dinner.
I need easy dinners on Karate nights. Any other good crockpot ideas?

theoprah, you will have forever friends if you bring DDs 2+3 chocolate (just plain milk chocolate is best). DD1 is kinda meh about chocolate, but she'll take it. You could have won over her heart with Smores Poptarts, but I didn't think to say that before you left the States. And doing laundry is fine - I was actually going to offer that anyway and then forgot.

Dds 1 and 3 have colds. The little one was up every half hour coughing and crying until I brought her to bed with me. Dh has a cold too. I told him he better take the cold meds bc he’s the only one who can and I’m going to be pissed if he tries to power through and suffer longer. I need help, not a warrior. I’m light of dd3, I am skipping the gym today. I need her to rest up. Crockpot meal I love: Chicken breasts, bag of frozen mixed veggies, can of cream of potato, refill can with milk, put it all together and cook on low. Serve over biscuits. That’s dinner tonight!

DD has croup! We were up half the night. Dr said nights 2-3 are usually worse but they gave her a steroid shot. I've never seen her this miserable. 😪😪😪

scorpioscuba forgive me for being an idiot. I assumed croup was a cold weather thing. I’m sorry Your dd3 has it. How do you know it’s croup? Dd3 was great all morning, normal and active and then at nap started coughing like crazy again. Garage sale update...I’ve made $40!!

You are not an idiot dizzycooks! DS never had this so it's all new to me. I read that it is common in fall and winter. Dr diagnosed her due to barking dry cough at night, wet cough during day, fever, listening to her lungs and looking in her throat.

This is a cold weather favorite here. It’s from the Small Victories cookbook I linked to earlier. I was super skeptical at first. Like... turkey meatballs? With no egg? And no breadcrumbs? Whaaat? Thank you nellieoleson and everyone else who recommended yummy dishes! I am really interested in learning to cook and this is a good start. I will try to get a meal plan grocery list this weekend and see how it goes! I think cooking one new recipe a week is doable! We are going away this weekend to visit friends but should be back Sunday evening until in time Add me to the Hubby working a lot list. He got home at 8 tonight and between work and dd we hung it about 3o minutes. Boo. He's still working at home now and I'm in bed with the babe. Sorry for the sicks... hate that it's already going around!

I'm losing it. The steroid shot side effects are awful. DD can't sleep. Hasn't slept and is miserable. She's been sobbing off and on all day long. I don't think we'll be sleeping at all tonight. 😭
