Monday: Yom nua (spelling may be off) basically steak, cucumbers and cilantro with fish sauce Tuesday: eat a church Wednesday: stuffed eggplant, salad Thursday: zucchini fritters and quinoa salad Friday: pizza
I have a ton of leftovers for lunch so that will be BBQ pork sandwiches, orrechiette and beans, and shrimp stir fry

Monday-Italian beef sandwiches and carrot fries

Wednesday-Crack slaw and rice

I love Tuesdays. We signed up for a summer program and part of it involves dinner for everyone. It's. it fancy, but I do not care. It's food and I'm not cooking it or cleaning it up.

We're getting rid of stuff in the fridge and freezer before our trip on Thursday:
Today: leftovers Tues: chicken tortilla soup Wed: I'm at work, DH and the DDs will have rice pudding Thurs: ground beef stir fry Fri: Whatever they're serving in the plane. We ordered kids' meals for the DDs, so here's to hoping it's something they'll actually eat.

I went to the grocery store last night and bought easy frozen meals for H to make the kids while I'm gone. I have Hello Fresh coming on Saturday. Does this count!? 😂

Tonight - probably Wendy's or something. Tues - H isn't home so I'll probably make Mac and cheese for me and the kids Weds - my mom feeds us Thurs - maybe chicken Alfredo? Fri - I have no idea.
We really need to get on this whole planning thing. I keep meaning to start, but H doesn't cooperate.

Now that things are slowing a little i need to get back in the swing of cooking, and also planning ahead. Most of the summer hubs has been just picking up something to grill which is fine except he usually gets good steak or the super bougie chicken that's locally raised and eats better than we do which is $$$$s. Anyone see anything good that's a one pot type meal? The un-egg roll thing sounds good. Going to give that a go next week.

I made a type of ratatouille tonight that was easy and amazing! 2 zucchini, 3 tomatoes, 1 eggplant, 1 onion, all cubed and tossed in a casserole dish. I topped with fresh chopped basil and a healthy sprinkle of Parmesan cheese. It was so good. I'd add chicken or sausage next time and a bunch of fabric, but I had neither tonight. Serve with crusty bread.

It's a family favorite - we prob eat it once a week except during the hottest weather. blogs.kcrw.com/goodfood/2016/01/recipe-lucky-peachs-miso-claypot-chicken-no-claypot/I don't have a rice cooker, and just use the Dutch oven method. It's so easy and delicious. Oh, and I never have the shaoxing wine on hand so I substitute it with dry sherry. Bougie chicken for life, girl.

scorpioscuba chicken that is too fancy for its own good. Like they live on a big beautiful farm and everything is organic and they probably get massages every night before they get tucked into there little chicken houses. And apart from the price it is far superior to other chicken. Texture and taste are substantially better. I am glad they live a nice life.
