Tom ka gai in a slow cooker: coconut milk plus about half that amount of broth. Heat through with garlic, lime peel, lemon grass, ginger and steep until fragrant. I peel and bruise the garlic, peel the lime and ginger with a vegetable peeler and generally keep the pieces big (and easy to strain out). Remove those solids and add in vegetables according to cooking times. I usually use sliced carrots, green beans, snap peas, peppers and mushrooms but you can use anything you have on hand. Add some leftover chicken, a splash of fish sauce and chile oil to taste a few minutes before serving. Balance the broth if needed by adjusting the balance between the coconut milk and broth, or add a little dairy if you want). Garnish with chopped cilantro.
I avoid strong flavors like broccoli and cauliflower in this soup and that overpowers the broth.

This vegetarian soup is very easy/doesnt require hours of cooking (though not crockpot friendly, imo) was suggested to me by a friend who is Turkish. This recipe is a variation using three rexipes she sent me.
Mercimek çorbasi (lentil soup)
Ingredients 2 onions 2-3 carrots 2 celery 3 potatoes 1 tomato 600 g lentils (preferably pink) 1.5 L vegetable stock
Instructions Fry the onions, celery, tomato, and lentils for 5-10 minutes. Add carrots, potatoes, and stock to the pot. Cook for a minimum of 20 minutes. Use blender to liquify. Serve with bread.

Adding to this thread that I just went to a fun event at a friend's house where everyone made a soup to share. We all brought containers to take soups we liked home and it was just a really fun night.
