Lasagna (I make my own sauce)
I love a good roast chicken w. veggies and potatoes. Ina Garten's technique is my go to for a perfect crispy skin.
I also make her company pot roast on occasion, I don't eat beef but the rest of the family loves it.

I remembered something I don’t cook often that we love — Donkatsu. I bake it in the oven so it’s not as much work as frying but still more steps than I have the bandwidth for most days.

My favourite project meals for weekends: - fresh pasta and homemade sauce (if you don't want to make noodles lots of places sell them in the fridge and even that can make it feel more elaborate - Cassoulet - French onion sandwiches (made with a roast beef) - Steak and stout pie - Lasagna - joloff rice
For quick during the week: - i love making freezer meals ahead of time and popping one in in the morning (green chicken chili, chili, pulled pork, creole sausage and beans) - poke bowls. everyone can choose what they put it - coconut chicken, tikka masala, butter chicken sauce from costco, just add chicken and make rice

I know some would say soup isn't a meal, but my kids love soup Mushroom barley is a current favorite Homemade tomato soup that my oldest makes and lemon orzo soup (minus the chicken) We have them with chunks of bagettes Otherwise when I have more time for things on weekends I bake, usually something that can be used as breakfast or snackd during the week. Like I made apple walnut muffins. My oldest really wants pumpkin roll so I make take that challenge on and see if I can make dairy free frosting for it. Pumpkin roll is pretty easy. Slice thin and store in freezer

But truly, I appreciate this thread… my picky, picky 7yo is killing me. I think there’s some neurodivergence at play with him. The 10yo has gotten somewhat better through constant effort. We’re in the midst of a huge effort among our household to collaborate and meal plan in the hopes of finding things for everyone and giving everyone some responsibility and ownership. And raising my morale, haha. (Picky kids… my IBS and difficulty with rich foods… MH’s weight concern and constant desire *for* rich foods, like cream- or cheese-based casseroles, that test his portion control issues) We’re doing “pasta Friday”s at the younger’s suggestion. Turkey meatballs from the Run Fast, Eat Slow cookbook (I can make a big batch and freeze). Random pasta and marinara sauce. Big salad. Make-your-own pizza night is usually a hit. Big salad. (lol, there’s a pattern, but, bizarrely, the kid actually loves salad.) Grilled chicken kebabs with rice and a veggie (grilled zucchini or steamed broccoli). If the kids don’t want the veggies I usually offer some cold ones, which they’ll eat (carrots, cucumber slices). Burgers on the grill once every couple weeks. Big salad.

spaghetti and meatballs or meat sauce (i'm the only one who isn't crazy about this meal) beef stew meatloaf make your own pizzas breaded chicken of any kind + roasted potatoes and veggies chimichurri steak lemon butter chicken chicken and tortellini soup anything with cornbread pork schnitzel

when youngest comes home next time he wants slow roasted pork ribs on the grill with potato salad and cole slaw maybe baked beans and cornbread and he always wants tacos and enchiladas always

We do a lot of recipes from krollskorner.com we love the chicken and rice and most of the salads

My kids love these slightly more time consuming than typical meals the best which we make on most football sundays:
Hibachi night (typically chicken, fried rice, veg)
German dinner (chicken or pork schnitzel, spaetzle, red cabbage, sweet and sour green beans
From scratch chicken pot pie. We typically do cute cutouts for the top. I make 2 regular size pies but always have extra crust and filing for my two little dds to make their own in ramekins.
Bolongese cooked for at least 3 hours. On pasta or made into lasagna
Homemade raviolis/homemade pasta
Beef stew with homemade bread

Any variation of Salmon and rice.
My kids ask who caught the salmon and where it came from. Their grandpa catches the best fish, apparently.

Our favorites that are time or labor intensive:
Dahl (with yogurt/spices) and homemade naan
Tacos, black beans and rice with homemade wheat tortilla. Since moving to France, we use merguez, a North African sausage, instead of ground beef that is soooooo good)
Homemade pizza (highly rec a pizza stone for this, a game changer!) Halal Cart Lamb over spicy rice
