My Hello Fresh box comes tomorrow. Tonight we're having baked basa fillets, baked zucchini slices, arugula salad, and rice.
I'm making an olive and bacon loaf today for snacks.

Um. What the heck is an olive and bacon loaf? Do I want to know? It's just a savoury olive oil cake/loaf with gruyere, rosemary, sliced olives, and bacon in it.

We made burgers, brats, and turkey burgers on Sunday. I also made a slaw side.
Today I added a turkey burger to a slaw salad and added ranch cilantro dressing. I got nothing else.

That sounds like my dream food. Cut the tips off a bunch of asparagus. Boil a big pot of salted water. Boil the tips for about 3 minutes and set them aside ( if you put them in a sieve and lower them in you don’t have to fish them out.) boil the spears for 6-7 minutes- take them out and put them in a blender. Cook a chunky pasta in the asparagus water. While that’s cooking, blend the spears, zest and juice from 2 lemons, 1/3 cup of olive oil, salt and pepper. When the pasta’s done, toss it with the sauce and add a cup of grated Parmesan. Add the tips you set aside earlier. My kids really liked it, including the one who hates asparagus (he didn’t know what the secret ingredient was.)

We ate it with link sausages (venison) and it is just so perfectly summery. And quite simple as well. I cannot wait to make this for my mom!! I even used gluten free pasta and vegan parm. This may be my new go-to when eating solo. 💜

We had rotisserie chicken with rice and air-fried cauliflower. And raw carrots. And it was just so delicious and filling.

I'm trying not to go to the store unless it's for fresh produce. Last night and tonight were both leftover gumbo with rice. Tomorrow, I should use up the bell peppers that are in the fridge, so maybe I'll sauteé them with onions and make shrimp to go with the tortillas we have. Shrimp fajitas, I guess?

I’ve roasted my peppers and onions for fajitas. I find this a lot quicker and easier. Plus I use just a mist of oil.

Dragging up this super old post to say jnu76 I made this for my mom while my dad was in the hospital. She was surprised and impressed. And I made it again tonight for my fam. I used asparagus out of our own garden, and served it over cauliflower gnocchi, with a side of leftover ham. P has been raving about it. And mh said the sauce was amazing and he didn’t know that I could cook food that good. So anyway. Just thanks again.

Ooh- I forgot about that recipe… thanks for reminding me and I’m so glad everyone liked it! I’ll have to pull this one back out when asparagus is in season here. It’s snowing now, so it’ll be a while.
