Tonight we had pizza with the neighbors for a birthday.
Monday: beef skewers with rice and sheet roasted veg Tuesday: ham steak with potatoes and green beans Wednesday: takeout

You guys! Turned out we were out of chicken - oops. So instead we made a box of Trader Joe’s falafel and made a Mediterranean quinoa falafel bowl with a lemon tahini dressing. And it was sooooo good! Pic to follow Bc I loved it THAT much.

On bottom is quinoa. Add-ins include falafel balls, tomato, roasted chickpeas, olives, pepperoncini, artichoke hearts, and hummus (wish we had cucumber!) and garnished that with parsley and paprika.
The tahini isn’t homemade, but the dressing was 1/3 cup tahini, juice of 1 lemon, 1 clove garlic, and then 2-4 tablespoons each of honey and water. Plus salt and pepper, whisked.
I made 2 bowls at the same time, and one is for my lunch tomorrow. And I cannot wait.

We have eaten a lot of junk this weekend and I'm feeling it. Actually, yesterday's dinner was S's version of Thai chicken larb. He diced up leftover chicken and seasoned it all up with Thai flavors. Fresh mint and Thai basil from our garden. And he braised a bunch of bok choy as a base for the chicken. Everyone loved it.
The rest of our weekend food has been heavy, though (soccer pizza party and cookies, leftover pizza, chicken nuggets, dinner a la Costco tonight...)
I need a reset this week.

But y’all. Have you ever made BLT pasta salads? Cold cooked noodles, chopped leftover bacon, chopped romaine lettuce and cherry tomatoes. Avocado if you like it. Dressing I mix Mayo, mustard, salt, pepper, apple cider vinegar, and penzey’s sandwich sprinkle. Mh and I add extra black pepper on top of ours Bc we like it that way. But omg so good and quick and easy. Gluten free if you use gf noodles and dairy free. And everyone in my house will eat it.

So I did my own tonight. Trader joe falafel with cucumber tomato, quinoa, humus, and the trader joe Tzatziki cucumber dip. I need to add more acid (garlic and lemon!). But I will be having this for lunch tomorrow.

I cooked pork shoulder roast covered with BBQ sauce in the crockpot yesterday. Pulled pork sandwiches with brioche buns. Fail.
I put the leftover pork today over microwaved baked potatoes for dinner. I'm not sure if it's because the sauce soaked in more or potato vs brioche but it.was.delicious. J kept asking for more so double win.
