We've been getting the free meal boxes from our school district this fall, and the boxes always come with a ton of produce. More than we can usually eat, but I want to make an effort to be better that it. This week, we got this - a large bag of sugar snap peas. I know I can eat them raw, but truthfully I'll do that once or twice and have a ton leftover until they spoil. Does anyone have recipe suggestions for what to do with all these snap peas?

I'd probably roast them with some fox point from Penzey's, olive oil, and salt. You could stir fry them, salad toppers, maybe in a pesto type pasta dish or alfredo?

I love snap peas bleached and then tossed with a little melted butter and mint. Also delicious this way with some pasta. ETA: basically, the recipe beersandweirs just posted

I love them raw. I also loved them sauteed in a little sesame oil and sprinkled with sesame seeds a minute amt of salt.

I make a stir fry chicken pita. Basically stir fry vegetables and chicken in teriyaki sauce placed in a folded pita that has melted Swiss cheese inside (holds it all together). You pick it up and eat it like a taco.

A place by my house has an appetizer that dips them in beer batter and deep fries them and serves with garlic aioli dipping sauce. I could eat countless orders of those.

Sautéed with oil & garlic/ginger Stir fry with the rest of the veggies in soy sauce/ginger/garlic/onion Or dipped in hummus/Greek yogurt ranch. I will eat half a pound in a sitting. What other produce do you have? I love meal planning. I have a bag of baby carrots and of carrot coins. And then about 100 apples. It's so random what we get, but I'm thankful for the free food!

I am slightly jealous. We are currently storing frozen fruit and applesauce cups for a year, and that is after sharing with neighbors. Also frozen corn.

awesome! I've roasted the coins with a jerk seasoning in the oven and we all really like that. It doesn't taste as good on baby carrots, so I appreciate this option!

Carrots roasted with salt, pepper, lemon and thyme are amazing. A little olive oil, 400 degrees for 20-25 minutes

Apples cooked down in a crockpot is amazing. You don't even have to add sugar if you don't want. I add cinnamon and brown sugar to mine. Stir it every 2 hours or so and enjoy the delicious fragrance.

Over the summer I ended up getting a hand juicer because the amount of oranges was absurd: 20 apples and 20 oranges every week.

And make fruit roll ups by spreading it onto parchment paper and putting in the oven at the lowest temp until the right texture - not quite dried but just past sticky.
