1 whole chicken cut-up (about 3-4 lbs.)
1/2 cup olive oil
1/3 cup red wine vinegar or white vinegar
2 tablespoons dried oregano
1 cup pitted prunes
1/4 cup capers with juice (optional)
1 cup olives (optional)
3 bay leaves
4 to 6 cloves garlic, crushed or minced
1/2 cup brown sugar
1 cup white wine (dry or cooking wine
salt and pepper to taste
INSTRUCTIONS
Place all ingredients in the crock pot and cook on low for 4- 5 hours, stirring occasionally (every 1-2 hours). Season to taste with salt and pepper.
If using Instant Pot - 45 mins - natural release.
Serve with a crusty sourdough bread or we like it with quinoa.
This was given to me loosely by my sister and is a dusky family favorite
Moroccan ChickenINGREDIENTS
Ginger
Paprika
Black Pepper
Cumin
Turmeric
Cinnamon
All above 1/2 tsp
Salt
4 small red onions finely chopped
Cilantro or parsley chopped - a handful
3 lbs chicken boneless breasts or thighs - Cut into 2-3 inch pieces
4 C Chicken stock
1-14oz Can Chickpeas - drained
INSTRUCTIONS
Mix spices and chicken pieces, season with salt. Heat a tablespoon of EVOO and lightly brown chicken pieces. Set aside.
Add in another Tbsp of EVOO and saute onions until soft and lightly caramalized.
Add in Chicken stock, chicken pieces. Cover and simmer until chicken is cooked through and sauce is reduced and thickened a little. Add salt to taste
Add in Chickpeas until heated through.
Remove from heat and mix in cilantro or parsley.
Yum over couscous.
I halved the salt to the Batsaria - I found 1 tbsp to be too salty for my taste. This is really such a simple and delicious dish. It makes a lot and will fill a large Lasagna pan. Halve the recipe for smaller portion size. It also portions well when cooled to be frozen. We love this dish and another household fav. Even DS loves it!
