Lol, when my sister was still in undergrad she came and stayed with us for a weekend and we made a meat and cheese board. She went nuts texting all her friends about this adult lunchable that her sister and BIL made for her. We made sure to put adult lunchables on the Christmas Eve menu for her this year. /ded at adult lunchables But really lunchables were my jam. And I’m all for meat and cheese platters now. However, and I’m embarrassed to admit this, when we went to Philly in September it was sometime between lunch and dinner and we just wanted a snack. We went to this hipster organic cafe whatever place and ordered two fancy mulled cocktails... whatever the hell mulled means... and a charcuterie plate; the guy with the handlebar mustache assured us we’d love the charcuterie board, the big boss man in back experiments and makes everything fresh etc. Cut to me and H receiving this “beautiful” tray of spreads that looked like Fancy Feast and read something like “liver and raspberry pate”... We both took one bite and were gagging. We filled up on the crusty burnt bread and left the whole plate. I guess what I’m trying to say is, yes to adult lunchables, with solid and hard meats. TWSS. That is hilarious and something we have accidentally done as well. H will always keep trying it though hoping the next bite will be better. It never it. We stick to the basics at home because that’s really all we can get here and honestly we’re not very educated on the finer aspects of meat and cheese eating. Havarti and a goat cheese are where we start and then we just grab at random. Same with the meats. Prosciutto, some fancy pepperoni that’s sitting next to a cheese and then whatever else they have. Add in some olives, nuts, fruit, honey, jams, and mustards. BAM. Meat and cheese night at SG’s house. It doesn’t take much to make us happy.

I just cooked 2 inch thick pork chops on the stove and didn’t burn or over cook them. They’re perfect!!! This whole week my meals have turn out perfect. This whole bringing meat out for a bit before cooking it has been a game changer. I’m going to guess that my H is even more thankful than I am haha.

sophiegrace I made that crockpot chicken quinoa chili and OMG it’s amazing. I had it for dinner tonight and I swear it was even better.

For you cheese lovers if you've never had gjetost (colloquially known as Norwegian ski cheese) you must rectify that at once. It's a hard cheese that has the color and flavor of caramel and is absolutely amazing as the dessert portion of a cheese board. Try it and report back. I've introduced many a friend to this heavenly cheese. 🧀
