I often made a very easy broccoli/zucchini soup:
2 big yellow onions 2 zucchini’s or broccoli 1.5 litre of stock (made from cubes in my case) 200 grams of Philadelphia (or something along those lines)
Sauté the onions, add the stock, bring to a boil. Cook the vegetables (not to long), blitz until smooth. Add the cream cheese, stir and let simmer for 2 minutes and done. You can add some fresh herbs at the end, or sprinkle some crispy bacon and/or cheddar on top.

olive oil 1 onion, chopped 2 cloves garlic, finely chopped red pepper, without the seeds 1 tsp cumin 2 cans of lentils 1.5l of vegetable stock 125ml coconut milk cilantro / coriander to taste
Sauté the onion, garlic and pepper. Add the lentils, cumin & stock. Bring to a boil, let us simmer for 10 minutes. Blitz until smooth, then add coconut milk. Serve with coriander.
We often eat this with pita bread & meatballs with lemon. You can also skip the coconut milk and add some lemon juice, in that case I like some yoghurt in it to take some of the heat out.

I don’t have a recipe for most of the things I cook, and this is no exception, but it’s so good and so easy that I just had to share:
Sweet potatoes roasted in the oven, run them under cold water and the skin comes right off. I chop them up and add them to a pot with sliced red pepper and chicken broth ( veggie broth would work just as well) Let it cook for a bit (really until the peppers are soft) and then blend it up with the immersion blender. Add Tabasco and black pepper. You can strain it if you want to get some of that pepper skin out but I usually keep them in. I serve it with a dollop of plain Greek yogurt.

I want to love soup, but I don't. Chicken noodle occasionally when I'm sick. I do enjoy some tomato, corn chowder or broccoli cheddar soup to dip grilled cheese or bagels in, but that's about it.

I'm so glad you posted this, b/c I have a baked potato soup recipe I loved but wasn't sure how to modify it for the crock-pot with all the dairy. I might try this next time I want to set something up in the morning. I will post my stove-top version in case anyone wants to see it; it comes together quickly, which is nice.

chrisy01 I just saw this 🤦🏼♀️ Lol. I just put a bunch of these on my Pinterest! They sound so good!! I think I’m going to try to start cooking more. I really don’t have an excuse now that I’ve been using the grocery pickup services. I can literally look at a recipe and add all the ingredients to my cart and be done. Lol.

The chili “recipe” I do
1lb ground beef, browned 2 cans black beans, drained and rinsed 1 can ro-tel 2 cans crushed tomatoes (you could also use tomato sauce or diced tomatoes) 1 onion chopped fine Like 4 cloves of garlic (I like garlic a lot) 2 tbsp chili powder 1 tsp ground cumin 1 tsp ground oregano 1 tsp salt 1/4 tsp cayenne pepper
Throw it all in the crockpot on low and let cook all day. Top with shredded cheese and/or sour cream. Serve with cinnamon rolls 😉

This link has 30 soup recipes. I tried her creamy chicken noodle first and it was soooo good. MH even likes it and he is not big on soup. This one I make because it’s easy, usually if I’m sick. It’s simple enough to add in other veggies if you want. I do have to season it well and will add red pepper flakes for a little spice. When there isn’t good looking kale in the store, I just use spinach. Whole Foods Chicken and Brown rice soup

Ok I think this is the last one from me. I love to make Olive Garden Zuppa Toscana. I think the homemade tastes better than restaurant’s. This is not the exact recipe I use, but very similar. I’ve just never done flour/cornstarch step or used that accent seasoning. You can omit that if you want. I also use fresh Italian sausage from the meat section. Usually ground, but if they only have links, I take it out of the casing. Always tastes better the next day after the flavors have marinated. Zuppa Toscana

I did it in the crockpot once, and totally screwed it up. I added the 1/2 and 1/2 at the beginning instead of waiting till the end, don’t make that mistake.

Which reminds me, one time I made a dupe of OC chicken gnocchi soup and it was so f’n good. I don’t remember what recipe it was because like 6 months ago somehow my recipe folder got deleted and I lost a ton of recipes. Made me real mad.

I make old school chicken 'n dumplings...rolling out and cutting dough, etc. My southern grandmas and extended family would be so proud. It's super labor intensive so I only do it a few times a year, but darn are they good. If anyone ever wants a fool proof recipe for it LMK.
