Hmm, I love salt but hate olives. I'll have to think about it. The gateway to caper love is to have them fried.

Tlex - this will be an inaugural run, but it’s basically a sheet pan meal with boiled gnocchi (I am not making my own, I found some whole wheat ones at the store), cherry tomatoes, peppers, red onions (and presumably whatever veg you have on hand). Everything gets tossed in oil and herbs and roasted. The recipe said the gnocchi get kind of crispy with the roasted veg. It sounded yummy. I will report back after we eat tomorrow.

I'm looking to go mostly meatless.
This past week we had veggie burgers, enchilada casserole, and a vegetable pasta.
I need to scour the internet and choose a few new recipes/ideas for this week.
If you have any favorite meatless meals feel free to share. 😉

Does anyone have a good recipe for borracho beans? We are trying a Hungry Root box this week. Diced an onion, sauté with 4 slices chopped bacon until soft. Add a chopped jalapeño and some minced garlic and sauté 2-3 min. Add drained, rinsed pinto beans (53 oz can) and a bottle of beer. Simmer for like 30 min. Season with garlic and onion powder. Add another chopped jalapeño and cook for 5 more min. Serve with limes and tons of cilantro. You can add a can of tomatoes if you want, but I prefer it without. ETA: amounts are estimates. I eyeball everything.

I have a lot of pesto on hand, anyone have a good recipe or 2 to use it up? I've got a chicken, mozzarella, tomato and pesto one, but I don't want to only eat that.

So, like, what do capers taste like? Olive-y? Yeah I would say like tart, crisp less faty olives, AnnPerkins. I love capers!

Hmm, I love salt but hate olives. I'll have to think about it. If this is in reference to the chicken piccata recipe, you could leave them out. I don't like salty stuff, for the most part, so I never use them for piccata and it tastes pretty good regardless.

If you buy those cheese tortellini in the fridge aisle, I've used pesto as the sauce instead of marinara and it's great. Especially on the sweet potato version costco sells.

Sweet potato tortellinis?!? Have not seen, but would love. Guessing they are in the refrigerated section with the others and near the pesto I'm currently planning around? Speaking of.sweet potatoes, these are amazing. www.melskitchencafe.com/black-bean-and-sweet-potato-burritos/
