M caprese chicken w cous cous T Korean beef bowl w rice W garlic basil chicken w tomato butter sauce made with angel hair pasta Th hot dogs & lemon pasta salad F oven baked parmesan coated rockfish w fresh green beans and egg noodles
We're trying to scale our grocery budget back a lot to compensate the daycare check since I just went back to work. Plus I need to be able to cook it in 30 min. So. All suggestions for future weeks welcome. I foresee much grilling in our future.

I made an asparagus and egg salad to bring to our friends’ for dinner which was tasty but smelled like poop.
For the rest of the week I have:
Sweet potato tacos Quick pasta and chickpeas Crispy tofu pad thai Gnocchi in tomato broth

We have a short week since we are going out of town on Friday.
Monday: shrimp and zoodles Tuesday: chicken and black bean taco salad Wednesday: salmon lettuce wraps with cucumber, jicama, and ginger Thursday: chickpea curry with sweet potato and red peppers

sunfrogger, do you like salmon? I made the below with roasted asparagus & Uncle Ben’s 90 second microwaveable jasmine rice tonight & it was a huge hit with all. My almost 7 year old actually went back for seconds. Including cook time, was about 35 minutes, but my salmon fillet had a thick spot. www.lecremedelacrumb.com/baked-thai-pineapple-salmon-in-foil/

sunfrogger, frozen tortellini is frequently on our meal plan because it’s quick and my kids inhale it. Do you have an instant pot?

M- quick meal for myself and E since h has hockey
T- chicken breast, zoodles
W- burritos beef
Th- honey garlic shrimp and honey garlic tofu with rice and broccoli
F- not sure yet depends if H has hockey or not.

Ok, I actually did a half-assed meal plan this week. MH will probably do most of the cooking because I'm pretty much useless after 3pm these days.
Spaghetti Monday (because spaghetti Sunday didn't happen this week)
Tofu Bahn Mi with pickled garden radishes
Salmon burgers
Kalbi (because either found a bunch on sale this morning)
Asparagus will be served with all of the above because it's dirt cheap and spectacular here right now.

sunfrogger when I'm trying to grocery shop on a budget, I will meal plan based on what I already have - so less ingredients to buy - and then when shopping - I will use the calculator on my phone and add up as I put items in the cart so I can keep track. That way, I can stay under budget for that trip. Also, check out Aldi! They have fantastic prices! Pretty sure you are in the same area as I am so there should be one semi-close by. You could make a bunch of shredded chicken (crockpot or instantpot) and use in different recipes. Tacos, burrito bowls, quesadillas, salads, wraps, etc. Aldi's chicken breast are always 1.89/lb so I can pay $10 for a large package of chicken that is more than enough meat to make various meals - often times enough for almost a whole week. That's a lot of chicken though Try doing a meatless meal a week? Veggie quesadillas, omelettes, roasted veggies, spaghetti squash
