Anyone have any low carb, dairy-free dinner ideas? DH is on Atkins and I'm dairy-free. So unless I want to make two separate dinners I need to find something that'll work for both of us The easiest option is a protein cooked simply with olive oil, s+ p, spices + a veggie (roasted or cooked in olive oil) So chicken/ beef/ fish/ tofu + collards/kale/spinach/asparagus/ broccoli etc. If you want something starchy you can also do some roasted sweet potatoes.

jess213, other options: quinoa fried "rice" (sauté some garlic, ginger and the white part of scallions in some sesame or canola oil and soy sauce/ aminos. Add protein (tofu, chicken whatever). Add any veggies or fruit (julienned carrots, cauliflower florets, etc. Or, I love pineapple— I add a little curry paste too if I use pineapple.) Add your cooked quinoa (higher in protein and lower in carbs than rice). Scramble some egg on he side of the pan and then evenly distribute that in. Garnish with the chopped green scallion parts, and serve.

Also, jess213, if you Pinterest, look up whole30, whole life challenge, or paleo recipes— generally dairy free (you may need to sub something for the butter; I recommend either olive oil or earth balance, depending on the recipe), and low carb, pasta free, etc.

You say healthy "dairy free" recipes and I get excited, jess213. I'm going to spam this thread with ideas. If you want something cheesy, try making your own cashew ricotta. Just soak raw, unsalted cashews for a few hours until they are bloated. Drain, and put into the food processor or blender. Process with a little water until it reaches the texture you want, and add salt, and maybe a little lemon zest. If you want to do something Italian, this is a really good sub for ricotta. So use it to make an eggplant rollatini or "parm" or something sort of like a chicken parm, bake, etc.

layloo mmmm I did only get like 3-4 hours of sleep the night before. easternshoregirl that could be too. I did drink water yesterday but certainly not as much as I should have given we were outside most of the day. CestLaVie wine has definitely given me more migraines than beer.

Opinions please. They say if you are going to be outside today to stay in shade and drink lots of water. Do I avoid being outside or because we don't have AC do you think I could take the kids to the splash pad which is partially shaded?

jedi, glad you stopped the migraine in its tracks! I know red wine is a pretty common trigger. Dairy and cheese in particular is a trigger for me.

Question for my migraine ladies. Do you guys get triggered by alcohol? Sometimes when I have a beer or two it triggers a migraine. But not often. Last night I had one beer and within 60-90min I could feel the start of one. I guess i feel like if it was a true trigger it would happen every time? Or is it common to just happen occasionally? I can't say that has happened to me ..

Meeting a friend at the park at 10, dropping A back home for lunch and an early nap, I have to pick up a dress that was being hemmed and drop off another one to also be hemmed (Friggen bridesmaid dresses), then grocery shopping and a friend's daughter's 2nd birthday party at 2. At some point, my H needs to figure out and purchase whatever it is he wants to get his dad for Father's day. We are giving it to him tomorrow since next weekend is completely booked up. I asked H a week ago to brainstorm what he wants to get and he still has nothing in mind. 😟

jedi - riiiiiggghhhtttt??????????? Ugh! Here's the thing. Her daughter rarely takes naps and when she does they are at like 4pm... Its so weird. The mom did ask me and our other friend what time would be good and we said after 230 (hoping for like a 3pm party) but nope .. 2pm

It's going to be a beautiful weekend here as well! Slow start to the day today. M slept until almost 8, and then cuddled for bit. Finishing breakfast and then heading to a play date (going to a park I think).
We have to get our costumes and prepare for our murder mystery dinner next week!
