I usually get J's birthday cake from a local bakery, but this year I want to make it. I know we have a couple pro bakers here ( mapleme grumpycakes too I think?), I'm open to any input. First, how much cake is standard per person? Like if we have around 40 people max attending, how many cakes do I need? I wanted to make a rainbow layer cake, but I also don't want to use artificial food coloring so it seems as though I'm going to be out of luck there. Unless there are natural food dyes that I can buy? The internet gave me some recipes for homemade dyes but the time and flavors required didn't seem feasible. Also if anyone has any amazing cake batter/icing recipes they want to share, I'd love it

I use the wacky cake recipe. I specifically follow the sweet little bluebird recipe because I love the variations she has. But it's just the easiest, yummiest, and most consistent cake recipe I've ever used.
I have quit using a recipe for frosting. I just do 4 sticks of butter and a whole bag of powdered sugar. Mix it on low until combined, then add milk and vanilla till I'm happy with the texture and flavor.
I once swapped out 1/2 cup of powdered sugar for brown sugar and creamed it into the butter really well first. That was amazing.

For that many people, I would make a big sheet cake rather than a layer cake. You can make a white cake keeping out small bowls of batter to color. Then drop the colors on top in a rainbow pattern and swirl gently with a knife. It would be sort of a rainbow tie dye effect.
