Our architect came back with the first draft. I’m terribly excited to get this going. On the other hand I’m panicking because this is going to be a lot of decisions. Do we ask our architect to help us design the new space? Or keeping pushing forward? I’m new to this, help.

For the record this is what we are doing. The kitchen will be gutted and the stairs to the basement moved to where the second level stairs are shown now. The main bath on the first floor will be gutted and changed to a half bath. We will be close the hall and opening the kitchen. The current stairs will be a wet bar or coffee bar. Second floor will be all new 3 bedrooms, 2 bathrooms, and a loft. There is a possibility of a porch being added to the front for curb appeal and removing the stone planters that I hate.

The 5th bedroom will be an office, and the loft will most likely hold a desk for my work space.
Both of us will continue to work from home 2-3 days a week so we need dedicated space.
E is already getting ideas to decorate her room.

First question.
Ceiling fans? Should all the bedrooms have them? And do you have one you love?
I want to say yes because I love the air circulation in spring, summer and fall.

Do you have Central air? If so, you can run the furnace fan for airflow. I don't have any ceiling fans, I don't like how they look and they need to be dusted, which I don't want to do lol.

As for your first question, all of the places we worked with had designers on hand (flooring, kitchen, paint) and they had great suggestions. We’re finishing out basement right now and our handyman had a ton of great ideas for the bathroom and where to put walls and the kitchenette but we’re still using a designer to bring it all together because it’s a smaller project and this time, we’re buying mostly everything from Home Depot/online. So again, it depends on your comfort level/if you have the vision and/or help from your suppliers.

Oven (double built ins?) & cooktops
Dish washer
Clothes washer and dryer
Tell me if you have one you like. I’m going middle grade here. And my parents are helping with this portion so I have a little more to play with regardless.
We are electric in the kitchen and I’m not sure if that will change.

We have GE everything except our tv…Samsung that’s just stopped working after less than a year of use! Plus it’s been a pain to get fixed (out of the part we need, replaced (they don’t have the same model in stock to send us) and they finally just offered us a credit to buy a new one BUT OF COURSE it’s for $400 less than we paid and no tv in the size we have is even priced for the amount they offered us so now I’m fighting them about this. So yeah, no Samsung.

I’m looking at Whirlpool, Maytag, and Frigidaire. Style wise I was thinking French Doors with a separate drawer. And then the freezer below? I like the idea of a snack drawer for the kids.

I’ve had great experiences with GE appliances but I admittedly don’t think I’ve tried Frigidaire.
For fridges, I really like having the pull out freezer drawer on the bottoms. Our last two places have had a side-by-side freezer and I really dislike it.

I truly don’t understand the appeal of this style.

I like the French Door style, and counter-depth so it doesn't stick out. We have the option to put our wall oven(s) next to the fridge and then a pantry in the corner. This is kind of why I want to come back with appliances and sizes for him as quickly as possible. He’s been really good about suggesting options for us beyond just basic floor plan.

I think asking the architect for ideas might be good. He/she prob has lots of thoughts on things that have worked for past clients. Even if you're like "we're trying to decide between this style [whatever], or this one.. What do you think would work best in the new space?". That way you're casualty asking opinions and not adding scope of work.
And def no Kenmore appliances. I've always been happy with Whirlpool.
And YES to a double wall oven. Or oven + microwave. Whatever you're more likely to use. I love the look of the wall ovens.
