Pizza on the grill tonight! I’m trying a new pizza dough recipe that I really hope is good, because it calls for whacking the dough on the counter while you’re kneading in a way that’s very satisfying.

Ok, for real, the only meal-planning I’ve been doing recently is ordering my Dinnerly boxes.
This week: Steak quesadillas w/corn & red peppers Two-cheese veggie pizza rolls Red pepper pesto spinach & ricotta ravioli BBQ chicken & broccoli w/Mac & cheese Southwestern bean & rice bowl

Update: the pizza crust was excellent, so it’s a keeper. Lots of cathartic dough thwapping in my future.

I decided to prep and make large portions of meals this week so I only have to cook 3 days instead of 6 (the 7th we have supper with my folks while they're here). Beef and broccoli Deconstructed kabobs (this is our new favorite) Chicken masala

I love Korean beef bowls. I want to say I toss in broccoli with mine. Definitely would eat these and stir fry cabbage bowls every week.

[mention]tj [/mention] any tips on making sushi rice? I’m going to attempt that poke bowl tonight! I make mine in our ninja foodi. Have also made in the instant pot and a regular rice cooker. Have not made stovetop. I just make the rice however you usually make your rice. In a large bowl, mix 4 Tbsp rice vinegar, 2 Tbsp sugar, and 1/2 tsp salt and stir stir stir still sugar dissolves. When the rice is ready and still hot, dump it into the bowl and fold gently but thoroughly. As you mix, it’ll get less sticky at first Bc it’s wet. Then it’ll get more sticky from the sugar. That’s it. Easy peasy.
