I can get a pretty good seasoning on my small cast iron skillet, but then we do burgers in it and it all goes to crap again. I destroyed 4 fried eggs in it this morning. I need something truly non stick that is only for eggs and other delicate cooking. What do I want? We have induction, so it has to be compatible. Share your favorite cookware please.

If you wash and dry your cast iron and then rub a tiny amount of oil in it before storing, it helps build up the seasoning a lot better. You may also be better cooking things in it that don’t require high heat for awhile until it’s better seasoned. Really high heat will ruin the seasoning if it’s not thoroughly seasoned. I use a carbon steel pan as my nonstick now, but it does require the same kind of care as a cast iron. You’re less likely to ruin the seasoning with eggs and pancakes and such because they take a lower heat.

My small cast iron is only for eggs. I keep it perfectly seasoned for it and the eggs don't stick. We have 10" and 12" cast irons for all the other cooking. My little pan is eggs only 🍳
And yes to washing while still hot to basically steam clean it, then lightly rubbing with oil while it's warm, before storing it. S forgets the re-oil step all the time and it drives me nuts.

It doesn't help that no one else in my house will care for the cast iron properly. It's great for eggs when I can get the seasoning worked back in, but then someone (*shoots side eye at my 9 year old*) will make a burger and leave it sitting. Or my husband, who has no patience to let the egg cook and will just rip it shreds trying to flip it too soon, will destroy some eggs in and let it sit. At least I got him to stop trying to soak it and then scrub it with soap. So, maybe I just need a different skillet for everyone else in the house so I can protect my little egg skillet?

Do you mind butter? I don’t mind my stainless steel for fried eggs or even scrambled. But I like butter.

Give them their own pan. Protect your precious cast iron.

I… own a nonstick pan for eggs. And I’m not sorry. I use carbon steel for almost everything, cast iron for some things, but not eggs. Living a strictly cast iron/carbon steel life is just unnecessary for me. I have a small t-fal non-stick pan for pretty much just eggs. I replace it when it gets scratched, which almost never happens (I think I got this one five years ago? And I’m the only one cooking on it now). I’m not in any way professional, but I find temp is key for cooking eggs. Too low and they stick, too high the butter burns. It’s a game I play regularly when I am impatient.

The best trick I learned for stainless is to preheat the pan dry and then add oil/butter just before cooking. Hot pan/cold oil makes a huge difference, sticking wise.
