Does someone have a good recipe for this? I feel like I remember seeing this posted as a meal several times here, but can’t recall by whom. I’ve done it. It’s been a while. I’m pretty sure it was just diced potatoes, black beans (canned), onion, and taco seasoning. |

I make black bean and sweet potato freezer burritos. Cumin and garlic seasoned black beans, red onions, roasted sweet potatoes and Monterey Jack cheese.

Ok I totally just made up my own recipe and I used butternut squash instead of sweet potato and they were delish!
