Hit me with your recipes.
I'm trying to eat more greens and less carbs.
I'm going to make a kale frittata this weekend and some spinach lasagna with mushrooms for the kids.
I need ideas.
Does it freeze well for sauteing later or just smoothies?

We freeze the fresh stuff and it works really well for smoothies (way better than pre-frozen stuff)
Kale and sausage soup Potato soup with kale and white beans Loaded veggie and bean soup Kale chips Pineapple green smoothies (canned pineapple + greens + vanilla protein powder + frozen banana)

My fave salad is kale, craisins, pecans/walnuts/pepitas/sunflower seeds/whatever, broccolini, and maple vinaigrette (1/4c maple syrup, 1/4c olive oil, 2T acv, 2T lemon juice, lemon zest, S&P).
I like to mix kale with butt squash and use that combo in fried rice, soup, quinoa salad, or just as a veggie side. But they really go well together.
My fave spinach salad is spinach, chicken, bacon, strawberry, amd feta or goat cheese also with maple vinaigrette.
I will put raw spinach in anything you would usually put lettuce in, so on sandwiches, in tacos, in breakfast sandwiches or tacos, etc.
My mom makes a really good warm salad with cooked tortellini, sautéed pancetta, spinach, pine nuts, and Parmesan. Add just a little of the pasta water to bring it all together. It’s delish.
And for both, I will just toss them into almost any smoothie, salad, casserole, soup, sauce or other mixture that I think I can get away with. We love greens and eat a lot of them here.

Not helpful but I just want to put out there my kids will eat 2-4 raw spinach leaves with dinner bc they think they are spider monkeys. L read somewhere that spider monkeys eats leaves. She is a future method actor. ETA I like spinach in scrambled eggs or egg casseroles in addition to putting it on sandwiches instead of lettuce like tj

Thank you so much for the ideas. I've already made kale chips, which my husband demolished. I'm going to make lasagna with extra veggies (mushrooms and sauteed greens) today. Lunches for me this week will be veggie wraps with spinach, humus, tomato, olives, cucumber and feta. And I'm going to freeze some kale for the pineapple smoothies. That maple dressing is going to be on the menu later this week. I have a butt squash to use.

I chop kale up pretty small and put it in taco meat with black beans. There’s also a miso/kale/quinoa/tofu salad that I like, and I can prep it on the weekend for lunches for the week.
