I stayed up way to late and had to get up early to baby sit N and L. Luckily they're tired too, so we're all curled on the couch watching Minnie Bow Tunes. But I'd rather be in my bed! I couldn't keep mj asleep either so I'm sure she'll be tired and grouchy by 10 am.

Morning!
C starts back to ballet today and is so excited. The recital costume reveal is this week so I'm looking forward to that. #livingvicariously
Otherwise, just a Walmart grocery pick-up. I have a few holiday returns to make but think I'll save that for tomorrow when both kids are in school.

Morning. Not much on the agenda today. Well outside homeschooling & managing three kids that is 😂. We had little insight into what ds was doing at school. Since we now see him doing the work, we’ve noticed that especially the given math assignments are waaaay to easy for him, 3+7 / 8-4 / 2*3 type of exercises. He can calculate 360-19, 12*4-2 in a heartbeat (he did not get this from either of us)... I’m a little worried that because his fine motor skill suck, they’re underestimating him. I want to mention this to the teacher, but do no want to be the ‘over achiever focused on cognitive skills parent’ either. Dd was all to happy with her beeswax three wise from the east assignment .

I'll probably make mine into a salad with a few crushed up chips to keep it a bit lighter! I have a ground beef taco casserole to make this week. I get chips for the kids and put mine over lettuce. I've also been using beyond beef instead of beef or turkey and no one can tell a difference yet so, win win. Maybe I'll make it tonight.

Morning.
Took M to school and then did my workout. On the couch with my coffee, morning shows, and catching up here. My favorite when I’m solo on weekdays. I bought a nondairy creamer that has added protein. I was expecting it to not be great, but it’s actually not too bad.
Lots of house work today and getting the house cleared of extra junk/boxes/etc. Hoping I can finish early enough to watch a show before M gets home.

I bought 3 bags of this and will use 1.5 bags for spaghetti and the rest for the taco casserole.

And we have tried beyond beef in a couple of different recipes, but the texture kind of trips me up. It’s a little too chewy. Almost like I wish the ground was finer on it.

Hi! Same old here. I was just listening to a podcast and they suggested making quick scallion pancakes and crepes using tortillas so I just played around with it and the scallion pancake is a hit! The crepe cooked a little too crispy.

I remember years ago someone mentioned scallion pancakes(?) from Chinese restaurants in the NE, and I’ve been wanting to try them ever since. Our Chinese restaurants in the south don’t do them.

I just dried my hair with the revlon dryer brush thing and I am now a convert. So much easier than the brush + dryer combo and I don’t even think I will need to flat iron my ends. The frizz products I used probably helped. My roots are still a bit frizzy and my flyaways are out of control so I will hit those quick with straightener.

I remember years ago someone mentioned scallion pancakes(?) from Chinese restaurants in the NE, and I’ve been wanting to try them ever since. Our Chinese restaurants in the south don’t do them. It’s a staple in my Chinese order, but they’re not great around here. They didn’t have a recipe listed so I kind of took what they said and made it my own. I took a mini flour tortilla and I dipped it in a whipped up egg. I poured toasted sesame oil into a cast-iron pan. As soon as it got hot, I put some chopped scallions in and laid the tortilla over top. I lifted it out after a couple of minutes, put more scallions on the bottom of the pan, then flipped the tortilla back in. I gave it a salt once it came out and then cut it into triangles. The flavor and texture was spot on. It usually comes with a dipping sauce similar to what you get with dumpling, but I didnt use it.

Almost like static electricity. I smooth with a tiny bit of water and they stay down. It is worth it for the nice shiny hair.

I let my air hair dry before I hit it with the revlon brush, I find it goes faster (my hair air dries super quickly) and I have less frizz.

Hi hi - just forced us outside for a walk around the block even though it's cold and misting a bit. I have a meeting with my coworker that I covered for while on maternity leave and getting her caught up. I am grateful for not being the defacto lead anymore without additional pay, but I kind of enjoyed it and am now reminded why I was salty 2 years ago when she was promoted under dubious maneuvering 😑

I'm at work and the attorneys have suddenly realized we are moving in a month or so. Suddenly it's Katie look into reprinting stationary and business cards, where will this go, how much supply storage to we actually need, we need a new refrigerator, lets get the rugs cleaned. Luckily, head honcho's wife is like ooo, I have time, I'll get quotes from movers and buy the fridge, and find someone to clean the rugs. Thank you!!!
Cadence did a good enough job cleaning up yesterday. I've given her the task of straightening up her desk today in preparation for school starting back up tomorrow. I texted mh and he said she was already working on it. We tried playing games last night and she threw a fit that mh was going to play with us and we went to play the drone home game, but apparently it needed both batteries and to be charged, so we couldn't play that and then a tantrum ensued. So...she went to bed. LOL
She also wanted to play daycare this morning, which I couldn't do because we both slept until 9 and I had to get ready for work.

I sat on the couch with the towel on my head and then used my products before drying. My hair is naturally curly though, so frizz is my life unfortunately.

As I section my hair to blow dry it, I use the Kenra blow dry spray. It’s also a little pricey. I just used the $5 off and a gift card to buy a big bottle last week.
