We are having a few friends over today to bbq and swim. So this week will be bbq leftover heavy.
Sun: pulled pork, coleslaw, grilled corn on the cob Mon: pulled pork and coleslaw on Hawaiian rolls and baked beans Tues: pork tacos with sweet Chile slaw, chips, mango salsa, corn Wed: Greek quinoa Thurs: fried rice Fri: homemade pizza

I’m working tomorrow, but grilling out with friends after. Meal plans so far:
Burgers and cauliflower “potato” salad Asian lettuce wraps Taco stuffed peppers Broccoli cheddar soup Pizza

Last night we had steak, steamed new potatoes and roasted eggplant, red peppers and onions. Omg the roasted veggies were so good!
Tonight, pulled pork, potato salad and roasted Romanesco cauliflower
Tomorrow, stuffed peppers
Wed, pulled pork reimagined. Probably as a taco salad
That’s as far as I’ve got.

Yesterday I made thai basil chicken and rice to use up the thai basil in my garden that just started to bolt.
Tonight is probably frozen pizza or something.
I have a small eggplant to use up, so I need to figure out what to do with that.

Guys, I'm so tired of cooking. This is where I am. I have basically given up on cooking right now. If the worst thing to happen to our little family in 2020 is that my kids ate a lot more pb&j and boxed macaroni & cheese than usual, oh well.

I have a small eggplant to use up, so I need to figure out what to do with that. Have you seen the recipe for Moroccan lentil stuffed eggplant? I think it’s minimalist baker. But it looks soooo good. Or just toss it with mixed roasted veg as a side.

Or just toss it with mixed roasted veg as a side. oooh that looks yummy! This eggplant is small, but I could get more. I got some of the Maya Kaimal Everyday Dal packets from Whole Foods the other day and Nugget was a big fan of the split pea and coconut and the black lentil, tomato and cumin. Both were tasty, but not spicy at all, so good for spice-adverse sometimes picky 4 year old. Definitely going to incorporate more lentils in food, and Indian flavors. she loved the butter chicken we got as takeout a few weeks ago.

I love to hear about the foods you and your family eat! We feed our kids what we eat, if they don’t like it they don’t eat it. But I won’t like make chicken nuggets or anything. So my kids have been eating sushi and Indian food and many flavorful foods their whole lives. And people look at us like we are crazy. I will never forget the looks we got as my 7 month old E chowed down on tandoori chicken and naan at an Indian restaurant. Anyway. My cousin was here this weekend, and 1 of her kids will eat only carbs and the other will eat only meat. And trying to make them lunch the other day was an exercise in futility. Whereas for my kids I just stuffed some leftovers into a Hawaiian roll and threw some fruits and veg on the plate. Lol. I complain sometimes about the quantity of food E eats. But I think it’s an easier problem than kids who survive off yogurt and air.

We have a similar philosophy, and my kids probably eat more junk food that they should, but I totally feel you on the other peoples' picky eater kids. when BFF's kids are over for dinner it's always a challenge to figure out what they will eat (and Nugget is anti-chicken nugget and hot dog currently lol). I've never understood the whole making your kids a whole separate meal thing, but maybe I just lucked out with two somewhat adventurous eaters that mostly took to my philosophy of we all eat together for dinner. Don't get me wrong, my kids eat their share of easy mac and spaghettios and lunchables, but I have no time for separate dinners. Also Indian food is delicious and I'm sad I didn't try it till I was an adult because my parents don't like it.

I also love hearing about the different foods you all eat. I pretty much only enjoy making foods from other cultures so we eat a lot of asian/Indian inspired meals. It's important to me that my kids be able to eat anywhere and find something on the menu that they like, or be served whatever at someone's house and try it without issue. We didn't eat any foods from different cultures at my house growing up, but my best friend's mom was Japanese so I was lucky to be exposed to lots of Japanese/Asian food from being at their house frequently. We try to use a variety of spices so the kids get used to them. They are getting better about it as they get older.

also tj I love seeing your menus because you make so many tasty sounding things! This group has been such a good resource for expanding our dinner recipe horizons. I have so many favorites culled from the meal plan posts over the years. milano most of my go-to dinner cooking is either East Asian, Indian, Mexican or Italian/Mediterranean. I was thinking the other day how I really don't make a lot of the old school "classics".

I always said I’d never cook separate meals for M and she’d just eat what we ate, but lately we have been living that chicken nugget life. I do try to get her to try everything, but it’s really hit or miss, and she’s pretty picky. I am always jealous when I read these meal plans and see stuff that M would have nothing to do with.

I don't make separate meals for my kids - or if I do, it's rare. They're better than many kids, but they're not adventurous eaters. I don't think it's my fault - they are exposed to many things that they've refused, like, 20+ times now. Oh well.

At the end of the day, some kids are picky and some aren't*. It's just the way it is. Mine do eat separate meals sometimes because I like fire spicy meals and they do not. So we have chicken nuggets or fish sticks for them sometimes too.
*meaning no one should feel like it's their fault if their kid isn't adventurous. Or picky AF.

I also grew up in a house that never ate foods from other cultures. So I love to see how many people do it now. H routinely refuses dinner and goes to bed hungry on plain cheese pizza night. So. Sigh.

My kid is just picky in weird ways. She likes one thing and the next week it's gross. Heaven forbid she eat any kind of potato. And sometimes we have to push her to eat a "no thank you bite" off her plate of things we know she likes (or she eats nothing). But put her in front of a plate of sushi and she's eating salmon roe like it's candy. *shruggy guy*
My brother and sister and I were given the same meals growing up and my brother was always picky AF. As soon as he was old enough to use the microwave he would make his own dinners. He eats more variety now that he's older, but still not as adventurous as my sister and I. So parental choices only get you so far, some kids are just picky. And especially now, we gotta do what we can to make life manageable.

And full disclosure on me. This past week when I got groceries I ordered huge lasagnas and all kinds of other pre-made frozen meals. I was just not feeling meal planning at all so went hog wild on frozen prepared meals. The freezer section is an amazing place! Usually I just get frozen pizza and egg rolls and ice cream. My freezer is extra well-stocked now.

It got chilly here today and we have rain for forever. So instead of Greek salad tonight, I made taco soup. I used fire roasted tomatoes instead of plain. Bc I had it. And it was so so good. I’m so glad I have 2 bowls of leftovers.

+1 to cultured food kids. They go nuts for sushi (the good stuff, not just Cali rolls). But they totally go through phases of pickiness. R hates anything garlic right now and thinks it's "spicy". But we remind her that taste buds change often so that's why it's good to keep trying things
