I scored a ~3# chuck roast yesterday at our local meat market. I want to make a roast this week. I don’t do this. I need help. Do you have a recipe you’ve used that is easy and tasty? I have an oven, a slow cooker, and an IP. I can cut the roast down if I need to.
I really want comfort food so I need it to be yummy and also so I won’t feel like I wasted good meat. Thanks!

I really like Pioneer Woman's recipe for french dip sandwiches. I made it on Sunday as a roast with mashed potatoes, and the au jus as the gravy. thepioneerwoman.com/cooking/french-dip-sandwiches/As a side note, I made the au jus and onions in a separate pan while the roast is cooking, and I add about 4 cups of water to the roaster (under the roast /rack but not touching the roast) so that the toppings that drip off don't burn to the bottom and smoke. - this one is a touch spicy with the pepper, but is delicious. I usually give kids a piece from the middle, which has a lot less of the rubb on it, and DH and I eat the side pieces. - I always have to roast it a lot longer then it says. after the given amount of time, I turn the oven down to 425 and just keep checking with a thermometer. it says 20-25 minutes, but I find closer to 40 minutes (but mine was partially frozen still I think). so just watch it with a thermometer. - to make things less complicated, i use beef broth for the consomme, broth and sherry. It still tastes as good (I have made both ways), but then you only need 1 ingredient. - i use the entire bowl of rub that this recipe generate for a 3lb roast and its fine.

I just rub the roast with a little olive oil, salt, pepper and garlic, brown in a pan thunk it in the crock pot on low with a beef bullion cube or two and about a half cup of water cook til it starts to fall apart.
make gravy with the drippings and serve with mashed potatoes and peas or something. then next day shred the meat and have in tacos with lots of salsa and/or taco seasonings when you heat it up then if there's enough left add bbq sauce and put on buns with cole slaw
