What are your go to meals when the temperature soars? I dont mind using the crock pot or a short time on the stove, but I hate having to turn the oven on. Any and all ideas are welcome.

Tortellini salad: tortellini, raw veggies of choice (we do cucumbers, tomatoes, and an assortment of peppers), mozzarella cheese, pepperoni, and a dressing of some sort. We've done it the Bolthouse yogurt caesar and ranch and both are delicious.

Tabbouleh or other Bulghur-based salads. I do not like raw leafy greens of any kind, so I have trouble with hot-weather meals. But tabbouleh is my go-to. I have done traditional or added things like canned cannellini beans & sun-dried tomatoes or shellled edamame & feta to mix it up a bit.
I'll also replace the greens in meal-type salads with orzo pasta, which is an easy switch. DH loved the orzo caprese salad I do sometimes.

I throw veggies and some marinated meat on the grill. But I'm in Texas, so I really don't escape the heat by grilling outside.

We have a gas stove. I don't use the oven a lot when it's hot out. Even cooking on the stove will raise the temperature of my kitchen by several degrees, especially when I boil water or something. I was looking for recipes that took minimal cooking but you would still consider a meal, not just sandwiches and salads.

We have a gas stove. I don't use the oven a lot when it's hot out. Even cooking on the stove will raise the temperature of my kitchen by several degrees, especially when I boil water or something. I was looking for recipes that took minimal cooking but you would still consider a meal, not just sandwiches and salads. I struggle with this all summer. And since I have an open plan living/dining/kitchen area, using the stove/oven raises the temperature in my main living area. I do a lot of hearty salads, which I can get done in the morning and then let them "meld" in the fridge until dinner time. Bulghur is my new favorite ingredient, along with orzo and couscous. Rotisserie chickens are my secret summer ingredient for a lot of things -- it's actually more cost effective for me to buy a rotisserie chicken than it is to roast my own, and then I have lots of chicken to use in many ways. Pizzas are quick and easy without heating the kitchen too much and last year I tried several different chicken salads -- some as layered salads with ranch dressing, crumbled cornbread, and vegetables others as traditional shredded chicken salad stuffed in pita bread or served on sliced tomatoes.

We do a salad we call The Big Salad, we do lots of veggie and grain salads. We use lots of barley, bulghur, and farro. We also grill.

We do lots of salads. I usually grill chicken or steak every few days so we have that on salads. I mix it up between cobb, ceasar, and asian noodle. That usually keeps us pretty happy.
I do a tortellini salad too. Boil tortellini and a minute before it is done, add broccoli florets to the water. Rinse under cold water and drain well. Put it in a bowl, add a diced red bell pepper, then a mix of half mayo, half prepared pesto. You can also had grilled chicken. Its really good and keeps for 2 days in the fridge.
We also do a bigger meal once a week so we will have leftovers that can just be microwaved...like lasagna or other casseroles.
I don't use my crockpot as much as I should but we have done meatballs in sauce, Italian (drip) beef and pork loin in bbq sauce all for sandwiches.

Lately I've done a greek tortellini salad, strawberry spinach salad with grilled chicken and goat cheese, and lots and lots of grilling of proteins and veggies.

I do a lot of large batch cooking in the slow cooker or the pressure cooker and we do leftovers for a couple days. I do rice in the rice cooker.

We make pulled pork/chicken in the pressure cooker, then use that for sandwiches, tacos, quesadillas and whatever else we can think of. We also do stir fry a lot, since that's meant to be quick. BLTs, lots of breakfast for dinner meals.

Rotisserie chicken from the grocery store is always popular at my house. Tonight we used it with tomatoes and feta to make Greek salad wraps. I have also made pulled chicken sliders on Hawaiian rolls with it.

I've been doing a lot of shrimp because it takes 5 minutes to cook on the stove and you can season it many different ways

cold cut sandwiches, side of fruit and raw veggies we grill - the meat and veggies and then serve with cold fruit (no indoor cooking) crockpot meals served with fruit.
We eat a lot of fruit and raw veggies in the summer - we are in FL and it's stinking hot and humid. We also hit up places that have half priced apps during happy hour with live music so the kiddos can run around and we don't have to cook or clean.
