I am just typing out my lunch list. Let me explain. I will pick a few things or the kids and when I am making my shopping list the stuff goes on there.
Reason being when I buy stuff like baby carrots or something of course I have enough for more than one day.
I have a simple formula of:
main fruit or veggie snack/dessert drink napkin note
They get 2 healthy choices then 1 that's not - like a treat.
This is tape on the inside of one of my cabinets so if I am groggy I can "remember" or if my husband or one of the kids is packing they have it for reference.
entrees: Peanut butter and jelly sandwiches regular, sealed, or pinwheel - not really peanut butter or sunbutter Turkey sandwich or pinwheel Salami and ham sandwich or pinwheel chef salad Pepperoni and mozzarella sandwiches or pinwheel mini subs sandwich sliders create your own lunchable
To make the pinwheels I cut the crusts and roll the bread with a glass.
hot pasta jambalaya chicken alfredo chicken noodle soup spaghetti with meat sauce spaghetti with meatballs beef stew meatloaf with rice taco salad macaroni and cheese fried rice corn dogs red beans and rice cut up chicken breast
pickles strawberries grapes baby carrots apple slices oranges tangerines tangelos fruit cups banana clementines/halos blue berries celery sticks corn corn on the cob cheese chips chips and salsa popcorn fruit snacks pretzels cheese crackers string cheese yogurt cookies brownies beef jerky salad as a side banana plums hummus

I love this McBenny! Even though I'm a teacher, I haaaaate packing lunches for DS and myself! I also like to do tortilla roll ups similar to the flattened bread roll.

Thanks for this. I am going to stash it away until fall. DD started Kindergarten in Sept and I am so lost as to what to pack for lunches for her. She does eat a lot of different things, so I feel like it's going to be difficult. You're ideas really help b/c there are quite a few things on your list that she will eat that I hadn't even been thinking about. I know I have quite a bit of time before she starts Kindergarten, but I am the type of person who thinks about things months in advance.

The only raw veggie DS1 will eat is carrots. Any suggestions on other veggies your kids will eat raw? He won't eat salad, celery, cucumbers, tomato, broccoli or cauliflower.

My "formula" is a main course that includes protein, a veggie, fruit and a starch if the main course didn't include it. Currently the favorite combo is what we call sushi or cheese plate. Sushi: tortilla, sliced turkey or ham, cheese rolled up and sliced, served with various veggies and hummus, and then chopped fruit. Cheese plate: sliced cheese, crackers, deli meat, various veggies and hummus and grapes. On occasional I'll send goldfish or animal crackers and Nutella, but that's a great, not a regular thing.

Ugh, I hate making lunches. Fortunately, my 3rd grader is ok with having more or less the same thing every day. I am still pretty limited by what he will actually eat.
His big back-to-school request this year was a new lunchbox, since he's an upper-grader now. He wanted a bento-style lunchbox. God, I hope he is not expecting some pinterest transformation of his lunches!

salami has been a huge hit this year. also rollups made with salami, cream cheese and pickle or turkey. Black olives is another possible "vegetable" . "do it yourself" sandwich- the hot meat (sloppy joe) is in a thermos, he puts on bread or hamburger bun. also tuna fish/mayo do- it- yourself, although other kids kinda pick on him for eating tuna?. also variety is over rated. He wants to eat one thing everyday until he gets sick of it, then we find something else. We also sometimes do hummus in the individual serving and carrots or crackers. DS is in first grade, and getting into choosing a carb, protein, veggie and fruit.(grapes, berries, small mandarin or orange are eatem most consistently) Also the presliced apples in a pack from Costco. I like to throw in a yogurt tube or cheese stick just in case hes extra hungry. Regular garbanzo beans will get eaten sometimes, I microwave them in the morning. Also frozen peas. They are unthawed but cold by lunch. DS likes chicken soup, and Ramen noodles (drained somewhat from the juice) as an occasional- but he prefers them and peanut butter and jelly for breakfast. Mac and cheese or spaghetti in the thermos USED to be good at lunch, but lately a big NO.

I have been lucky in this department in that most days DS likes the hot lunch being served. Packed lunch has become a struggle. He all of a sudden won't eat cheese so his beloved turkey & cheese sandwiches are him taking the turkey out & eating it with some of the bread. Like why kid? PB&J are a hit & miss too. He's really picky too which suuucks.
